Rotisserie Chicken Marinade with Honey and Chives

For this recipe you will need one chicken, weighing between three and four pounds. It should be cleaned and rinsed out before you apply the rotisserie chicken marinade. This is a very flavorful recipe to use, and the combination of sweet orange and honey with the more savory soy sauce and garlic gives a wonderful depth to this rotisserie chicken recipe.

Half of the marinade is used to soak the chicken and give it flavor and the other half is for basting. Since the second half of the marinade will not have come into contact with the raw chicken, you can baste the chicken at any time during cooking.

Honey and Orange Rotisserie Chicken Marinade

Ingredients -

Juice of 4 oranges
1 cup honey
2 tablespoons salt
2 minced garlic cloves
½ cup chopped chives
¼ cup soy sauce
1 chopped onion
1 chicken

Preparation:

Combine the orange juice, honey, salt, garlic, chives, and soy sauce to make your marinade.

Put the chicken in a bowl and add half the marinade.

Allow 3 or 4 hours marinating time in the refrigerator, turning the bird over every 45 minutes, so the marinade can coat every part.

Preheat the oven to 375 degrees F.

Stuff the bird with the chopped onion and cook it on the rotisserie spit for 1 hour and 30 minutes or until the thigh meat reaches 180 degrees F.

Use the other half of the marinade to baste the bird as it cooks.

Let the chicken cool for 10 minutes before you serve it.
